The Wines...

2023 Carmen und Herbert Zillinger 'Herbie'
Tasting Notes
A Grüner that's at once classical and exciting, the Zillinger "Herbie" opens with distinctive wet stone mineral notes beside ripe meyer lemon and fresh, soft herbs, moving to a palate that's similarly bright and fresh, undergirded by an unmistakable mineral backbone.
Food Pairing
The "Herbie" will do well beside Austrian classics like a plate of schnitzel, asparagus with hollandaise, or a crudo of salmon or hamachi.

2022 Azienda Agraria Fidora Lorenzo Vulpes Aurea
Tasting Notes
The Vulpes Aurea, or Golden Fox, is a textbook Valpolicella, delivering both a fruit cart full of charming red cherry fruit, a touch of earth, and a real seriousness that comes through on the palate. On the nose, it's all red and black cherry, with some woody herbal elements, and uncommon depth, while the palate is long, supple in the mouth, and full-fruited, with drying, food-friendly tannin.
Food Pairing
A classic regional pairing for this wine would be risotto cooked with red wine, though it'll be excellent beside gamier meats like duck or venison, or full-flavored poultry dishes like jambalaya or cassoulet.

Iuli Lulù
Tasting Notes
One of the only varietal Baratuciats on the planet, Iuli is a true champion of this almost-extinct, highly-unique white from Monferrato, and the Lulu is the most classical example that exists. Opening with distinctive notes of fresh, green herbs, a touch of citrus pith, and a unique mineral element, the palate is very bright and fresh, with the same citrus and herbal elements dancing together towards a brisk, mineral finish.
Food Pairing
A pairing partner well-suited for a number of light, fresh preparations, the Lulu will do very well beside a shrimp cocktail, scallop ceviche, or marinated artichokes with oregano.

2023 Domaine Arsac Les Aoutres
Tasting Notes
A lovely example of how delicate and floral Syrah can be in the right hands, Domaine Arsac's Les Aoutres begins with teasing notes of violets, dry earth, and a whiff of Syrah's trademark meatiness on the nose, moving to a powerful palate with abundant black and blueberry, along with just a touch of pomegranate, and a tense, mineral finish.
Food Pairing
A superb barbecue wine, the "Les Aoutres" will be match a lovely match for a plate of grilled ribs or a classic picnic shoulder, or something a bit plainer where the peppery Syrah adds seasoning, like a Cassoulet, or a white bean soup.

2023 Vegatolosa Sauvignon Blanc
Tasting Notes
The 2023 Vegatolosa Sauvignon Blanc from Manchuela, Spain, is a striking expression of the varietal, marked by a beautiful juxtaposition of aromas and flavors. On the nose, it offers a lush bouquet of tropical fruits, with guava and passionfruit leading the charge, showcasing the vibrant and aromatic potential of Sauvignon Blanc. However, the palate takes a refreshingly different turn, leaning towards a lighter, more citrusy profile that includes notes of lemon zest and lime.
Food Pairing
Its tropical nose pairs splendidly with dishes that feature similar flavors, such as a tropical fruit salad or a Thai green curry. Consider pairing it with a simple grilled white fish or a citrus shrimp ceviche, where the wine's acidity and zest can complement the dish's freshness. A goat cheese salad with a lemon vinaigrette dressing would also be a delightful match.

2023 La Sibilla Non Morieris in Bello
Tasting Notes
A supremely rare red made from 100% ungrafted Piedirosso vines, the Sibilla is a tour de force on the nose bringing black cherry, a bit of star anise and white pepper, and a unique sanguine, iron streak, moving to a palate with the same complexity, but plenty of power and richness too, with bold fruit weight, and lengthy, powerful tannin.
Food Pairing
Pair the Non Moreis with bold, rustic fare like bouef bourguignons, a game meat ragù over pappardelle, or pair with an original from the region, Lasagna.
