The classic pairing with this would be a nicely seared steak with a sauce Bordelaise, although a cheeseburger would also be an excellent tableside companion. Meat is what this wine wants, so brisket, tacos carnitas, and ragú will also pair excellently, as well as roasted mushrooms or beets.
Tasting Notes
When we talk about "savory" wine, this is the kind of wine we're talking about! With several years of bottle conditioning after a modest stay in some oak barrels, this wine has taken on earhen and leather-y aspects, to go along with full dark fruits, and the classic Bordeaux herbaceousness. The tannins are long and composed, but certainly present, pair with protein to mitigate these, and enhance this classic wine.
