There's nothing better with oysters than a nice, toasty bottle of bubbly, and this fine Cava certainly fits the bill. It will also work well with baked and fried items, like a brie en croute, or quick-fried calamari, but will do well with many varieties of salads, too.
Tasting Notes
There's a real movement in Penedes now, (the greater area where Cava is made), towards changing minds about this once-simple sparkling wine. Jordi Lluch has greatly reduced its vineyard holdings to focus more on quality grape growing, and that's evident immediately in this fabulous bottle of bubbly. Beginning with notes of toasted bread reminiscent of Champagne, and descending to a palate of vibrant citrus and orchard fruits, it's a wine that's easy to love, but still complex and developed in its own right.
