Bordeaux, particularly with a bit of power, will always be a great match for rich, celebratory, red meat preparations like Tournedos Rossini, or Beef Wellington, but this wine has enough versatility to match pork, chicken, or richer vegetables like roasted beets or eggplant too!
Tasting Notes
In the world of wine tasting, and subsequent rating, there is an idea that typicity, or how much a wine comports to what it says it is (i.e. a Barolo, or White Burgundy, or Napa Cab), is chiefly important, almost as much as how delicious the wine is. If you can't taste the petrol in an aged Riesling, or the dried roses in a Nebbiolo, or the black currant in a Bordeaux, than the wine is lesser for it. This is all to say that this is a Bordeaux that really tastes like Bordeaux! With a touch of herbal green on the nose, along with dense red fruits and a touch of oak, it's immediately familiar, while the palate brings the promised fruit density. On the finish, there are ample tannins, but they're integrated and not grating - for an even richer wine drinking experience, decant this wine an hour before enjoying!
