The darkness and ripeness of the fruit here really wants ripe, dark vegetables like beets and eggplants. Slow-roasted, confited, or grilled over an open flame, these will be pitch-perfect with this wine. Darker sauces with lighter proteins will also be very very nice - our heads jump to Chicken Mole or Coq au Vin, but this wine has enough adaptability to work with a bevy of options, try it with whatever you're having for dinner.
Tasting Notes
Andreas Gsellmann isn't a man of tremendous ego, and neither are most winemakers worth their salt. They let their carefully-farmed grapes speak for themselves, and get out of the way when it comes to winemaking. There's a deftness of touch to this wine that's immediately evident - at first, the nose is mineral and intense, almost bordering on smoky, but that quickly dissipates, and pure red fruits show from the first sip, and for a long long time after(we're talking a seriously long finish). This is why we love Austrian wine, it can be long, intense, and bordering on "powerful," without being overpowered, per se.
