Think simple and homey when pairing with this countryside bottle: coq au vin in a dark red wine broth will be simply perfect. Pork ribs glazed with a vinegar-based sauce will sing. Perhaps our favorite pairing with an earthy bottle like this are preparations that foreground mushrooms and other root vegetables though - a risotto with wild mushrooms, or a mushroom tart will make you go, "wow" as you taste these two together.
Tasting Notes
This is a wine that reminds us that wine is made on farms. There's a rustic charm to the Cabernet Franc here that gives it a slight edge; its tannins are relatively high, it has a bit of something we call reduction which you may smell on first whiff, but will blow off in a couple of minutes, and there is a slightly vegetal "green" quality to the fruit too. All these might sound like detractors from an otherwishe delicious wine, but in this instance they add in spades. The dark red fruits and chocolate elements that make Cab Franc so special some in with these unusual, but natural, complements making this wine truly one-of-a-kind.
