Pairing
The unabashed fruit in this wine will love pairing with game meat like venison, duck, and pheasant, but will also do very well along some simple sausages. If you feel like pleasing your inner Peter Brady, try a thick-cut pork chop alongside an apple mostarda and some bitter greens for a throwback that will sing with the Terrier des Cailloux.
Tasting Notes
Ever since the film Sideways, Merlot has been the butt of way more bad jokes than it ever deserved, and worse, its reputation as one of the world's great red wine grapes has been totally besmirched. Merlot in the right application makes wines that are spiritual siblings to their fellow Bordeaux variety, Cabernet Sauvignon. This particular wine is a great example of just how serious Merlot can be, with dense red fruits, present, rich, and food-friendly tannin, and a charming earthen, clay quality that invites pairing with all manners of fares and occasions - we recommend putting it in your favorite wine snob friend's glass, and not telling them its Merlot, we'll be here to hear how it goes.
