This rare Italian Pinot deserves a lovely Italian pairing. This wine is going to be excellent with a classic mushroom risotto, or even Vitello Tonnato, although it's going to shine most next to a classic ragù of hand-cut game meats and poultry like wild boar, squab, and quail.
