The fundamental "green" quality of a wine like this is a great match for many kinds of fruits and vegetables (a thai-style Green Papaya salad sounds fabulous), but it is also a lovely complement for some foods that might want a bit of freshness and herbs. Salmon with a creamy herb sauce will be a tremendous match, while a whole roasted chicken stuffed with thyme and rosemary will also delight.

We say that knowing that Sauvignon Blanc is one of the world's most popular grape varieties, and that there are plenty of beloved wines from Hawkes Bay in New Zealand to Sancerre just a few dozen miles from where the grapes for this Touraine are grown, but this example from Domaine de la Cotelleraie is truly extraordinary. With classic grassy, herbal notes on the nose, combined with a classy minerality, it's immediately appealing. the palate is bright, and straightforward, with full citrus fruit, and ample acidity and zip. A great wine that shows its origin very well.
