Pairing
Dark-fruited wines like this love game meat, or anything cooked over an open flame, although we're sure beer-can chicken will be just as elegant a pairing. There is some substantial acidity to back this wine up that will make it a lovely foil for fattier cuts of pork (think crispy pork belly, or bao buns), or even a simply-grilled steak. If you'd like to go plant-based, this is going to impress beside a babaghanouj, or a plate of slow-roasted beets with mustard.
Tasting Notes
The wines of the Languedoc have long held a reputation as juicy, jammy, bulk wines without much refinement, but, as worldwide wine drinkers have gotten more curious about this large wine-growing region, more and more hidden gems are being unearthed. This wine, a blend of two ostensibly fruity grapes, Grenache and Cinsault, is a stunner. With a light whiff of mineral, freshly-struck match on the nose along with soft red fruit, and a soupçon of herbal green, the palate here really brings it home. Dark, dense red fruits, present, well-mannered tannin, and even a mote of licorice on the palate, and a classy mineral finish altogether make this a wine not to be missed.
