The lean nature of Chablis makes it a great foil for raw seafood, although the weight of this particular wine means it will also do well with richer cooked seafood as well: think Coquilles St. Jacques or White Fish with a simple beurre blanc. The green of this wine also makes it a great pairing for things like artichokes and asparagus.
Tasting Notes
Chablis is Chardonnay with a steel-cut edge, and this Petit from Domaine Ventoura has that directness and purity in spades. Opening with trademark mineral and very light intimations of grass, the palate is generous and full without bing overblown. Of course, the finish here is crisp as can be, yet goes down quite smooth.
