Sylvaner may be the best cheese wine there is, and this wine will do well with many varieties of fromage. From Emmenthal to cheddar, its inherent savory quality and acidity make it a great match for any cheese course. Poultry and shellfish swimming in butter are also welcome alternatives.
Tasting Notes
Sylvaner is in the middle of a reclamation project in Alsace and Germany. Long thought of as a simple white grape meant for liter bottles of table wine, talented winemakers have begun teasing out the nuance of this understated, yet exciting grape. This wine has a nose of minerals and light florals, plus a palate of tremendous depth and weight filled with ripe orchard fruit and a touch of savory minerality.
