While the bready yeastiness of this wine will make it a great pairing for all of those classic champagne pairings (creamy scrambled eggs, caviar and crème fraiche on brioche, etc.), the great acidity and somewhat muted fruit profile makes it super adaptable too. It will do well with grilled seafood or even chicken, and all manners of prepared vegetables too!
Tasting Notes
The "Mai Sentito!" from La Staffa is one of our favorite varieties of Pet-Nat (or Petillant Natural) - rather than leaning on fruitiness, it has a strong mineral backbone, and tremendous, palate-cleansing acidity that leaves you refreshed and wanting more. It's a fabulous food wine, whose light elements of pineapple, pear, and citrus function a bit like the between-courses sorbet old-fashioned restaurants once served. Enjoy it as an apperitif, or with all kinds of fare.
