While Prosecco may have achieved a status as simply brunch bubbles, there's a history of winemaking in these trellised vineyards of northern Italy that should garner far more respect. This wine, made in the "Col Fondo" style, where the secondary fermentation is carried out in the bottle, is serious and seriously delicious.
