The classic regional dish of this region is a rich risotto of red wine and mushrooms, and this wine is built to accompany that, no doubt. However, it will also do well with plenty of salty, rich preparations. A whole roasted chicken with vegetables underneath would be a great French take, or a side of roasted squash with pesto will pair fantastically.
Tasting Notes
The main Valpolicella grape, Corvina, sometimes reminds us quite a bit of Pinot Noir, especially on the nose. This wine reads ripe cherries through and through, moving to an elegant and soft palate with plenty of structure in the form of silky tannin and lip-smacking acidity.
