A nice floral bottle of bubbly like this works very well with lightly cooked fish and poultry, such as a poached cod with beurre blanc or a classic chicken scallopine with herb butter and capers will both be lovely. The sweetness of the fruit here would also make it a beautiful partner to flavorful curries and stews.
Tasting Notes
There are a number of elements that keep us at arm's length from the wines of Sicily - the heat increases alcohol, the lack of rain makes it extremely difficult to use the dry farm method, and frankly, there's just not a lot of wine from the island. All that said, when we do discover wine from here, it always has something to say! This natural sparkler opens with classic notes of ripe tropical fruit and sweet flowers, while the palate is bright and ebullient with just a touch of tannic grip.
