If looking to go truly authentic (and truly delicious) with your pairing here, we would recommend a ragù of wild boar over grilled polenta, although other meats can surely be substituted. We would suggest hand-chopping the ragu for a rustic flair. A classic grilled Steak Florentine with plenty of olive oil and rosemary is another great option, or simply grilled wild mushrooms with goat cheese.

This bottle, from Pietro Beconcini, takes the signature red grape of the region, Sangiovese, and blends it with two white varietals, a hallmark tradition of the region. The result is a wine with a heady aroma of dried red fruit and a touch of tobacco, moving to a palate with substantial weight and grip.
