This wine from Sylvain and Nicolas is a showcase for just how mutable a grape like Cabernet Franc is - this bottle, fermented using a technique called, "Carbonic Maceration," is juicy and bright, and best enjoyed with a chill. The method, popular in Beaujolais, gives wines an inherent lightness, and with inherent the darkness of Cabernet Franc, it creates an interesting, totally idiosyncratic, yet delicious wine.
