A great wine to match all kinds of fare given its weight, but also acidity, the Bersan Saint-Bris will match French classics like Trout Amandine very well, it will be exceptional beside regional classics like Salade de Chèvre Chaud, warm goat cheese served on toast over salad greens, or Pôchouse, a stew of freshwater fish in white wine and cream.
Tasting Notes
Saint-Bris is a highly-unique appelation in Burgundy. While the larger region has an obvious predilection for Chardonnay (usually with some oak), this true Burgundian region has traditionally grown Sauvignon Blanc. The wines from here are somewhere between a Sancerre and a Chablis, and are woefully undersung. This Sauvignon opens with bright notes of gooseberry, citrus, and wet stone while the palate is rich and ripe, with some guava and passionfruit - a one-of-a-kind wine from one of the world's great Sauvignon regions.
