Grüner's best complement might just be asparagus and hollandaise, a classic across Austria, and the Hager will be delightful next to a few spears. The wine is dynamic enough though to be great beside a simple sautéed fish with capers and butter, or an herbaceous roasted chicken.
Tasting Notes
Grüner Veltliner is arguably the national grape of Austria, and this example from biodynamic pioneer Hager Matthias shows why. Opening with a pure nose of minerals and fresh green apple, the palate is electric with tense acidity, a crisp mineral finish, and a mouthfull of citrus and light orchard fruit.
