Pairing
A perfect wine for richer seafood preparations like salmon sorrel or bouillabaisse, this Pinot Blanc also has enough oomph to stand up to subtler chicken dishes like a scallopine or even a schnitzel.
Tasting Notes
Pinot Blanc can be a bit of a chameleon, taking on shapes that emphasize its natural acidity, or richer examples that show how full and weighty this ancient variety can be. The Vitulus Thesaurus, or Lamb's Treasure, is a beautiful midpoint between these two ends of the spectrum. Opening with subtle notes of white flowers and pear, the palate is long and robust, with a bit more yellow fruit, and a long, supple finish.
