A wine of this brightness is almost perfectly suited to enjoy on its own, but it will be delightful beside lighter protein-forward appetizers. Yakitori skewers, a peppery beef tartare, or a beet salad with mustard will all be excellent.
Tasting Notes
Pineau d'Aunis is an ancient variety from the Loire - although often confused with Pinot Noir, it is very much a distinctive wine grape. Known for making pale red wines, with an ethereal brightness, and a unique pepperiness, the Cuillette des Oiseaux is a Pineau par excellence. Opening with some of those light peppery notes, along with light candied strawberry and a touch of earth, the palate is a flight of ripe raspberry, clay earth, and a minor tannic exclamation.
