A great, lightly floral aperitif, the White Fox Xarel-lo will pair well with Spanish inspired seafood like boquerones over toast, or grilled mackeral with salsa verde, or a plate of fresh tomatoes with herb pesto.
Tasting Notes
Although Xarel-lo has long been a humble blending partner in Cava, a new wave of winemakers are teasing out varietal expressions of the wine, and the results are extraordinary. Opening with subtle notes of wet stone, white flowers, and a touch of unripe peach, the palate is medium-weighted with lots of texture, and mineral elements in the finish.
