A rare red aperitif, the Cuiellette des Oiseaux is a great wine to open the palate and contemplate on its own, although this will play well beside richer seafood preparations like brandade, or sole meunier, as well as roasted fall vegetables with plenty of herbs.
Tasting Notes
Few wines entrance us like a good Pineau d'Aunis, and this example from Compagnons du Schist is simply exquisite. Opening with deep, subtle notes of unripe cherry, grapefruit peel, and a whiff of smoke, the palate is crisp, crunchy, and viscerally appealing, with full tart fruit, and a soft mineral finish.
