Made from 100% Ondenc, an almost extinct variety, its nose is quietly compelling with notes of dried apricot, wildflowers, and a hint of spice. On the palate, the wine surprises with depth and grip. Earthy and bold, it leans into its limestone roots with a touch of tannin, giving it a firmness not often found in whites.
