A pitch-perfect wine for outdoor dining, the Peck is, of course, a spectacular pairing with flame-grilled chicken with piperade, or lamb chops with mint chimichurri, but could do equally well beside a charcoal-fired brook trout with lemon and rosemary. 
Tasting Notes
Coming from vines that have grown for more than two centuries, the Peck País opens with a tantalizing mélange of dried red and fresh black fruit, along with sassafras, anise, and just a touch of smoke, before moving to an ethereal, yet richky-flavored palate, with long, fine-grained tannins, and the kind of snap you'd get in a fresh blackberry. This wine's old vine character means that it takes some time to truly emerge in the glass, and it will be fully itself after a thirty-minute decant, or a good twenty in the glass.
