A bouncy wine like this will do well with plenty of different kinds of food - sparkling is a natural foil for fried foods, and this, with some tempura vegetables sounds like a dream. The effervescence here helps cut through richer, fattier foods too, so things like quiches, omelettes, creamy soups, and it helps accentuate the brightness with lighter fare like scallop crudo, or raw oysters on the half shell.

This is what Pet Nat is all about! While decidedly less elegant, and in a completely different style than traditional (or Champagne) method sparkling wine, the Le Spinée shows why more and more Pet Nat is being made the whole world over, and why it's enjoying a real renaissance. Trading austerity and precision for fruitiness and flavor, this wine shows some lovely lemon peel on the nose, with a palate of stone fruit, and a touch of creaminess from extended contact with the lees. A delicious wine for everyday celebrations!
