A champegnoise method wine from the chilly hills of Penedes, the Wood and Wires is so named because the winery lies on the same land as the family's old chicken coop, and, of course, because wood and wires are fundamental to the grape growing process. The cava opens with appealing notes of freshly-baked bread, caramelized lemon, and just a touch of wet stone before moving to a deeply refreshing palate with the same easy-going, but nuanced fruit notes.

A lovely aperitif, the Wood and Wires is a great way to start a party, or, and pair exceptionally well with light first courses like scallop crudo, goat cheese and fancy grain mustard, or cheese croquettas.

A classic bottle of bubbly from the Vosges mountains in France, the Burckel Jung Crémant opens with developed notes of citrus and green apple on the nose, along with a chalky mineral edge.
